Modo d'uso:
Il tè verde può essere preparato mettendo una bustina filtro in teiera per ogni tazza di acqua bollente e lasciando in infusione per pochi minuti, in accordo con la concentrazione che si vuole raggiungere
Il Matcha appartiene alla tipologia dei tè verdi e si differenzia dagli altri perché si presenta in polvere anziché in foglie.
È utilizzato in Giappone durante la cerimonia del tè ed è considerato uno dei tè più raffinati. Si ottiene con la macinazione finissima delle foglie di tè verde.
Le piante di tè che si trasformerà in Matcha si coltivano con attenzioni particolari. Non appena iniziano a spuntare i primi germogli primaverili - all'incirca dai 20 ai 30 giorni prima della data prevista per la raccolta - le piante vengono ombreggiate. Questo fa sì che siano indotte a trattenere più clorofilla, che renderà le foglie di un verde scuro intenso e brillante e conferirà al tè una maggiore "dolcezza", rotondità e profondità di gusto e aroma. Dopo il raccolto si passano al vapore per circa 30 secondi in modo da trattenere l'aroma e bloccare la fermentazione. Poi si soffiano con aria calda, si pressano e si asciugano senza arrotolarle ed infine si tagliano finemente.
